doc: Fix Sphinx warning about theme option

The Sphinx theme "sphinx_rtd_theme" dropped support for "display_version"
theme option in version 3 (currently used: 3.0.2).

Because the "ceph" theme inherits that theme, remove all references to
"display_version" from it.
