doc/rados/ops: add hyphen to mon-osd-pg.rst

Remove confusing parentheses and add a clearer (as compared to the
parentheses) hyphen (actually an em-dash, or at least it is intended
to be an em-dash) to doc/rados/operations/monitoring-osd-pg.rst
